Salsa Competition Rules

Definition of Salsa:

A classic Southwestern condiment made from fresh ingredients, including, but not limited to: tomatoes, assorted chilies, onions, garlic, salt, lime, cilantro and various spices.

Salsa Preparation and Competition:

Salsa ingredients may be pre-chopped and contents individually bagged before the event. This includes any roasting of chiles, etc. All ingredients must be mixed together on site at the event. Canned ingredients are acceptable including tomatoes, tomato sauce, chiles, onions, garlic, salt, lime and various spices. Each contestant must prepare a minimum of 13 gallons of salsa with one pint set aside for judging (a container will be provided ). There will be a mandatory chefs meeting at 9:00am. Public tasting will begin at 11:00am. A panel of celebrity judges will judge your salsa based on aroma, consistency, appropriate heat level, color, taste and after taste.

Your salsa doesn't have to be HOT to be GOOD!  Last year we had so many hot salsas the judges and guests couldn't taste anything!  Please consider entering a mild as well as a hot.
